Running at 260 degrees in 100 degree weather, on the highway??

If that's the case, something is wrong. There is no way it should run that hot in the stock condition.

I agree that you should confirm what you are running at before adding an oil cooler at all. The plain old loop cooler is fine for most SCs under street driving conditions.

200-210 is fine for oil temps. You may be running at that right now.
