Kerosene isn't colored, but most aviation fuel is. 87Leaded is red, 100LL is blue, Jet-A is yellow. It's more so that you can be certain the right kind of fuel is being put in your airplane (most FBOs have 3 or 4 fuel pump right next to each other, with diff grades of fuel, easy to ake a mistake).

During the preflight you're supposed to make sure that the fuel is the right color (my instructor got me on this once).

Actually, my girlfriend's dad is the manager of the chemical plant in West Virginia that is one of the only 2 makers of petroleum dyes in the US. No one really uses em for much (there are dyes in some automotive fluids, he makes the dye that makes Dextron red).
