The cooling system for the Rx-7 motor is about the same as you'd need for a V8.
However, the rotary is so tiny I have wondered if you could put a (pair of?) radiator(s) in the engine bay, with appropriate ducting and fans. No hacking of the front trunk required!

The Rx-7 conversion has been done a number of times. So far, I've only ever heard of people using the front-mounted radiator.
