Great idea Wayne, I think it'll work out well. We just implemented a few various wikis at the office for internal document management and knowledge base creation and they are working out great.
We're just using ScrewTurn right now, it's free and it works for our purposes, but I'll probably be playing with more in the future, and would like to see what you go with too.
If you decide to split up the job into multiple editors, I'll work for gift certs.

Just don't have 40hrs a week to throw at it.
