Would love to go to Vietnam. The food is incredible (so say present and ex g/fs). Make sure you get to Hanoi. It isn't as westernized as Ho Chi Minh City yet.
If you get Food Network, search for "A Cook's Tour" with Anthony Bourdais. He does a few shows in Vietnam. Make sure and try the clay duck.
