Don't plan on driving ANYWHERE near downtown on the night of the fireworks... it's bumper to bumper on the roads and in the alleys, and a lot of the core roads are closed to cars.
The massive throng of people is INSANE.
I'm also a big fan of the aquarium, and they just had a baby Beluga whale born, which is a huge draw.
If you like sailing and the beach, you can head over to Jerhico Sailing Club (
http://www.jsca.bc.ca/) and have a nice outdoor lunch on the patio of the Galley (
http://www.thegalley.ca/) which has an awesome view of English Bay and Vancouver. It's fun watching the boats launch from the beach and the traffic in the bay... especially on a weekend. (That's where I keep my 20' Hobie) There's also a lot of beaches right there if you want to veg in the sun and sand for a bit.
