I raced a Stiletto in the early 90's and also had a Davidson tandem. They rock.
No issues with a late 80's Davidson - that isn't "vintage" to me. In fact, that is a fairly modern bike wrt geometry and components that will fit. The problem with going into the 70's and earlier is hub spacing, cable routing, etc. Fine to putter around on but I wouldn't stake my life on 40 year old Mafac brakes.
But if you really want to ride it, at least put on fresh cables and brake pads.
