Yup. Stars getting blowed-up (supernovae) have been directly observed with the remnants relatively easy to observe by telescope and imagery. The life cycles of various types of stars are widely known by reasonably minded folks.

Of course, lots of nefarious things can happen to those photons on their way to fallible human eyes. No one has actually witnessed an individual star's birth and directly observed that same star through its life, all the way to a supernova event, so it must be all guesses.
