Thanks (so far) guys. I drink a lot of water anyway but really hadn't thought about loading up more than usual.
As to the clip-on handlebars, it's a position I'm used to and actually prefer it.
The bike is a 2005 Triumph Thruxton (essentially a modded bonneville).
I had planned on getting a mini tank bag for gps/maps, along with a rear bag for rain stuff.
I'd never wear that helmet for safety reasons (and I'd look like a bigger tool than I already am),
