The way clip import works is it creates a clip for each time you stop/start recording which is logical.
You can add audio as another track, you can import from itunes or files on your machine.
As far as exporting for youtube, depends on your footage, the contrast levels, amount of motion etc...
There really are no predefined sets. You experiment and save the settings that work best, start with them next time and tweak to suit.
