I agree that buffalo (bison) is pretty close to beef flavor-wise. I had it at Ted’s around Atlanta a couple of times. We went on a PCA run last summer to a bison farm. That was pretty cool. I was going to buy some steaks but his prices were pretty scary but he claims he sells out every season. More restaurant trade than consumers. I have yet to see it in a supermarket.
I’ve also had moose burgers & they were also very lean. Slightly gamey though. Now, if you ever see a caribou steak anywhere, buy it. That is really good meat. Cook it no more than rare.
