Buffalo will have the same cholesterol content as any other meat. If it is grass fed and never "grained", it should be substantially lower in fat (especially saturated fat) than beef. Even grass fed beef will tend to have a higher fat content. On the other hand, if it is feedlot "grained" buffalo or it has been ground with fat waste, it may be every bit as fatty as traditional beef. As with all other fresh food items, it pays to know the source of the meat and how it has been raised and processed.
