You basically dry rub and insert garlic cloves and fry like a turkey but 5 minutes a pound instead of 3 1/2. It wasn't my most successful experiment, I prefer grilling beef and pork, but what really came out great that I forgot to mention was lobster tails. I bought some live spiny lobsters in Ventura one New Years and fried for 1 min. per pound. Those and the salmon were the most successful.
The duck turned out nice and moist, I got a lot of compliments on it.
