That is similar to a recipe I always do with ribeyes. Peel potatoes, make a base on one side lengthwise. 1mm cuts all the down, but not completely through the potato. Press down and fan the potatoes, arrange in a baking dish. separate bowl, add heavy cream, chopped garlic, nutmeg, salt and pepper and room temp soft butter. mix well, pour over potatoes covering them with the heavy cream mixture. Bake at 350 for 2hours covered with foil. Grate some good quality gruyere cheese and sprinkle liberally on top. Brown for 30 minutes. Serve.
