Probably somewhere in the range of 18 - 25 minutes per lb. But it's just an educated guess since you are using convection & that's a fair amount of meat.
I would put them side by side on the same rack if there is enough airflow. If not (probably) stack them & revolve every 40 minutes or so.
Yes, at 325 although you could sear them to seal the meat at 450 for 15 minutes but that might be tough with the 2.
