Why not give it a shot. Part of the problem with failed attempts at this setup is that the mad scientists used too large of carbs. For a 2.7 with 100% efficiency at 6500RPM, you only need 310 CFM. (As calculated with online CFM calculators) It would be completely understandable that a 600CFM on a 2.7 would give horrible throttle response and would send a river of fuel headed towards the middle cylinders. And if you go back and read the sister post to this, when he actually added a manual choke, he ended up running it partially closed. In essence, running a smaller carb.

So something like the 300CFM Holley 0-80320-1 MARINE Carburetor would be applicable. You obviously don't need the marine rating, but this should give you an idea. There were millions of 2 barrel carbs put into use in American cars over the years... Just find something that has the features you are looking for.
