The buyer does not sign the bill of sale which you can download from the DMV. You sign both documents, notarized if that's what he wants.

Then, you file a notice of liability release to the DMV on your own post sale. You will only need his data and the mileage. I just sold a vehicle last weekend. The AZ DMV will recognize the documents and process them notarized or not.
