You will like those SS grates. It is true that the cast iron distributes the heat better, but when you use it at least 4 nights a week, cleaning the racks to get the salt off really gets old.
Oil them and cure in the oven.
BTW, do you have a hot plate for that grill? It looks similar to the one we have. It's a huge grill, mondo surface area.
