The Mini 14 though is awesome. A total delight to shoot, and I'm ordering another 2K rounds. So what is the fun 7.62/30.06 or equivalent? I suppose M1A (pricey) or an old M1 Garand. Any other choices?

SKS is a fun 7.62x39 counterpart. an old Russian M44 (or better yet M1891/30) would make a great bolt action, long distance rifle. the 7.62x54r is similar to the .308. you can buy the Mosin Nagant and 440 rounds of surplus ammo for just over $200.
