I just can't convince myself to like the cracklin's, but jerky and boudin, hell yeah. I used to work for CapRock. We provide satellite network links for the oil industry in the gulf, so we had lots of folks from Louisiana, NO and Lafy. They'd bring in some darn tasty boudin and jerky from time to time. We also had a Chili cookoff in the fall and a gumbo cookoff in the spring. That's what I'm going to miss most about working there.
