Most of what you are talking about is less Outlook related but more Exchange Server related.
The short answer is you'd be better off with OWA (Outlook Web Access) - you'll have your calendar, contacts and email all sync'd up. No mail server issues, etc.
The long answer is you could set up any number of PC's with Outlook connected to the same exchange server account. Your Wife's company IT dept will either help her with the settings (sometimes security is tied to the specific computer) or they won't allow it.
There are some more windows/MS savvy guys on the board that hopefully chip in.
