With the present early rims on your late offset car you are indeed sticking out to far. The tires are now traveling in a completely different arc circle. It does indeed matter because the tire is moved out on the stick (metaphor) and therefore moving back and forward instead of just an arc turn - there is much more travel in your tires now to allow them to rub and throw off the geometry of the suspension.
Lateoffset 16" pfoneys look great in my book.
