If by the "gasket on the sump" you mean the crush ring for the drain bolt, you'll also need a crush ring for the drain bolt on the oil tank. You don't really need to remove and replace the sump. In fact, it can be reinstalled in the wrong orientation and damage the oil pump pickup pipe.
A little smell is normal for these cars but if you have a strong smell of buring oil, you probably have some leaks. Any oil that drips down onto the heat exchangers gets burned off and can smell. Leaks are not uncommon, although most are simple to fix.
