My car does the same thing.
Whenever I remove the oil cap to check the oil level it would begin to run a little rough but it would never stall. I'm running SSI's with a SW chip.
I did the engine swap about 3 years and it's always been like that. I'm guessing it's normal for these 3.2 motors to do this because it runs perfectly
