Make sure you do not use the Chinese import drywall. Rotten egg smell and other chemicals used in production.
I would remove all the drywall with mold when you repair the damage. Bleach does kill the mold but since you have so much damage, it is not that much more work. You may only be removing the surface mold with the bleach and the back of the sheet may have more serious problems.
