IMO interior stuff is easier to change than exterior stuff. I'm running a 930S wheel and Recaro SRD seats and I think they look fine with early bodywork. Yes you'll have to rework your RS door panels but that's no biggie. Pull the mirror wiring out, sell your existing RS panels, and get new ones without the electric switch holes.
My vote is for the '73 stock mirror and chrome exterior trim. Change the interior stuff down the road when you run out of projects!
