Quick update: I gave her the laptop on her birthday, and the price was a bit steep for her. So we switched it for a different model - a MacBook Pro with a 13 inch screen - 2.26Ghz intel duo core processor, 160GB hard drive, 2GB of ram. It was about 1/2 the cost of what I had originally purchased.
She's happy - and the original monster MacBook was indeed overkill for what she needs.
