Aren't you supposed to use straight Argon for stainless?
Considering this isn't a mission-critical application, you're probably going to be fine. I'd see your biggest challenge as dialing in your settings, as you aren't going to find another piece of stainless with the same composition/thickness to practice on. (And not all stainless is created equal.)
I really wanted to get a Tig welder, but they are just too pricey for occasional use.
