Nice dish Mose............kudos for taking care of your dad as well.
Like salmon? try this one. Too simple!
Salmon filets (3 -4)
Chives/scallions (6 - 8)
Large bottle of Teriyaki Sauce (orange label) not the marinate
Place salmon in microwaveable dish (needs cover) that will hold the fish and entire bottle of teriyaki
Chop up the chives/scallions into two-three inch pieces and lay all over the filets
. pour the teriyaki over the chives and fish....the sauce need not cover the filets
Cover the dish and place in microwave
Cooking time varies with the size of the filets and how well you want the salmon done.
Start with a few minutes and then check, as they cook fast. I like to cook long enough to get the salmon lightly browned. A friend cooks for awhile, removes and drains most of the juice and reheats so the underlying skin gets really well done. Several variations, depending on your liking but the teriyaki is the key!
Fast, easy and amazingly tasty! Serve with a sweet potato and your famous asparagus
I tossed this together at a marina one night on a friends boat in Savannah, GA. He charters for a living. Ever since this dish (which is now his favorite) his clients always ask for it! Its been a favorite of ours for awhile: "Bobs Teriyaki Salmon"
If your a teriyaki sauce lover, its worth a try.
