A simple battery cutoff switch as you have will work fine as long as you only turn it off AFTER you have turned off the engine.
As you have noticed the alternator will keep the engine running if you turn off the battery while the engine is running.
For racing purposes, when a battery cutoff switch is used to turn off the engine in event of a wreck, the switch is 3 poles. 2 closed and 1 open.
When the switch is turned off, 1 pole breaks the battery, 1 pole breaks the ignition. The remaining open pole closes taking the alternator output through a 100 watt, 10 ohm resistor to ground. This prevents the alternator destruction.
Unless you are racing, use the simple switch you have and ONLY TURN IT OFF AFTER THE ENGINE IS SHUT DOWN.
