Here's 2 easy tempura batters I use:
#1:
2 eggs
1 1/3 cups flour
1 tsp salt
1 cup flat beer
Beat the eggs in a bowl, add 1/3 cup flour/salt. Add the beer alternately with the remaining flour, beating after each addition. Let the batter stand @ room temp app. 1 hour
#2
2/3 cup flour
3 Tsp cornstarch
1/2 tsp salt
2 eggs
3/4 cup ice water
Stir flour/cornstarch/salt in a bowl. Beat eggs & ice water in another bowl until blended. Add to flour mixture; stir until just moistened. The batter will be lumpy, but don't stir it again. Keep the batter cold by placing it in a bowl set in a larger bowl of crushed ice.
