Welcome to the good 'ol USA !! Some cops can and do whatever they wish at the moment. They do not need any other proof of you speeding other than their word that they were "pacing you" @80mph
If you can not strike a deal prior with the DA, do NOT go into court w/o an attorney and try to represent yourself !! All this does is piss the entire court off !!
