I made a pork tenderloin skillet chili (asada de puerco) for dinner tonight. Brown diced pork tenderloin with diced pablano pepper, garlic, and cilantro. Then add diced onions, green chili enchilada sauce, and salsa verde and let simmer for 10 minutes. Serve in a big o bowl with shredded cheddar jack and a scoop of sour cream on top and some Doritos on the side.....mmm mmm good.
