Dirty Eggs
no pics, ate it too fast and have to go back to work. just made something new (to me) that I'm calling dirty eggs.
in a saute pan, add a little oil and leftover dirty rice and beans. let sit long enough to brown a crust. beat up some eggs and a little water, S&P, break up the rice/bean crust, poor the eggs in, let sit 30 seconds, shake pan, shake pan, shake pan and spill out onto a plate already loaded with soft bacon and... canned tamales heated up. Don't overcook the eggs.
What a great dinner!
