Came home BUT Im not quite sure what to do at this point to adjust. TOO many rpms and I dont exactly know what happens at each rpm to adjust up or down. Actually, not sure how to do this at all right now. Anyone near the tampa area that knows how to do this?
It's normal for the A/F ratio to read lean when you take your foot off the gas - the AFR meter is simply being tricked. The things that are important are cruising and under throttle.

At this point, I would ignore rpms over 3000. Don't even bother going there. Make a map for 2500rpm. By this I mean figure out what control pressure you need at 2500rpm for the various amounts of manifold vacuum (remember, lower control pressure means richer mixture). Once you've done that, apply it to all the rpms. This will give you a good starting point to then start messing around. When you mess around, don't just suddenly floor it to redline, go little by little to make sure you don't blow something up (now, I say that as a warning, but really the map that is ideal at 2500rpm will likely be very close at all other rpms, except for maybe the high rpm and low rpm extremes). There's no substitute for a dyno for making the full-throttle map though.
