Oh yes, you sure will as the throttle response difference between the Varioram and the ITB's is night & day, but this sort of project is NOT cheap to do, correctly.
Unless this is a race car, I'd recommend sticking with the Motronic and the Varioram as these things work very very well with lots of room for software improvements. Further, this runs well with any kind of gasolines, especially in hot weather.
