I found answers to my question about coolant flow thanks to Clarks:

I dont see how my thermostat could be sticking, as it is new. I purchased the exact same one that I pulled out of the care, and am using the same shims and seals.
But I still don't understand how the thermostat seals in the waterpump housing.
