well i can tell you how and why a thermostat work, as to your particular problem thats something else.
to start the thermostat holds coolant in the engine until it reaches operating temp which is usually around 210 degrees, at which point a wax pellet inside the tstat melt's pushing a rod up and thus it opens and allows the coolant to flow through the radiator and keep the engine at optimum operating temp's.
your problem is A) you have it installed backwards. B) the temp rating on the tstat is higher than OEM allowed. C) you incorrectly bled the cooling system and there is air in it allowing the water to boil. and last but not least D) you cap is broken and does not keep the correct pressure in the system, therefore lowering the boiling point.
