What about stepping away from the whole "jello" think, and trying something completely different?
I would think that Great Stuff sprayed into a mold, then lightly spray painted grey/green would give a decent brain, which would surely survive shipping (and protect what's inside), would have zero chance of melting, and would still be dissect-able.
