Depends a lot on the condition of the parts and the quality of the work done to date. If the car is complete, less drive train, value could be anywhere from $4k - $10k, maybe a bit less maybe a bit more. Two ways to try and come up with a value - either (1) start with the value of a complete and finished car and subtract the cost to get yours to that condition or (2) add up the value of the parts you have. Method 2 almost always yields a bigger number.
