As a geotech, I've designed a few wine caves, including the largest one in Napa Valley, in the hills to the east. It was in the volcanic tuff. Some of it is excellent, needing little or no support. Then it can change quickly to crap with no strength at all. It's obvious when you find the crappy 'rock'.
