You have a staggering amount of work to do. I am just completing the restoration of a 65 Porsche factory 912 coup. It has taken nearly 6 months, 10 hours daily, 7 days a week, and mine was not too rusty. I could not imagine it would take so long.
I am a body man and a long time fabricator. I now know virtually everything about these cars from doing this project. My next projects are 65 911, 69 911S, and a 66 911, two of which are rusty like yours, or nearly so.
I suggest finding a place to sand blast everything once you have all of the welding completed. It will make things a lot easier when its time to apply your coatings. You will need to fabricate the rear window lower corners unless you can find a donor car. The whole rear window lower area is a tough area to repair.
