There are lots of ways to fight tickets. Look online, there are a lot of resources.
I am not an attorney and this isn't legal advice. Weird that I feel I need to say that.
First, ask for as many continuances as you can. Drag it out.
Second, in some jurisdictions, you can have the case moved to the county seat. This makes it a pain for the cop to get there some times.
In California (and maybe Wi.) the judge can not also be a prosecutor. Therefore, he can't judge and represent the state. Ask for a prosecutor.
Ask to see the certification of the cop to use the timing equipment and the most recent relevant calibration of the equipment.
At any point during this process, when the state can't produce, ask the ticket to be dismissed.
If you still are stuck then take pictures that show where he was, and where you were pulled over. See if you can show that there is no way you could be traveling at 83 mph, have him time you and stop where you did.
Be sure to tell the story leaving out your speed and tell the judge what the cop did when you told him he was wrong.
