Homemade sweet & sour chili sauce recipe....
Make a batch and keep it in a mason jar or something in the fridge.... the longer it sits the more robust the chili flavor is....
anyways, take a small sauce pan and add about a cup and a half to two cups of water (I never use recipes, I just do it by touch)
once the water starts to boil, turn it down on lowest setting....
add about 1/4 cup of vinegar
two to three tbsp of ketchup
1/3 cup of sugar or more if you want it sweeter...
2-3 tbsp of finely chopped pickled ginger
a touch of salt
1/2 to 1 tsp of crushed red pepper flakes (depending on how spicy you want it)
mix it all up well in the pot...
in a coffee cup add about 3 tbsp of corn starch and fill coffee cup up half way with water mix this up and pour into you pot...
keep stirring until it thickens a bit and then take it off and put it into a bowl to cool down a little... once cooled a little, put it into your container of choice... personally, we use one of those red ketchup/picnic squeeze bottles like the dinners use to use.... works great..
