We like the Boulders up in/near Cave Creek. Maybe a little dated and not up to JW Marriott/Fairmont resort standards, but MUCH more laid back. Not a water park, just a decent pool with food/bev service. Cute little casitas with comfy beds. Highbrow golf course if you're into that. Probably located near some Pelican-people, too.
We go every Labor Day. The wife satisfies herself getting heat stroke at the pool, I cower inside with football, a book and adult beverages from the nearby Safeway. She's happy - therefore I'm happy.
NOCA at about 32nd and Camelback is awesome, too. Don't let the strip mall location fool you.
