Sounds more like you had excessive salt in your system causing you to retain too much water.

indeed strange to lose that much weight in that short time just by drinking more water. ( especially after dehydration...)
And yes, you can poison yourself and die by drinking to much water!
Water does have an LD50, and for rats it's 90 ml/kg. It should be something similar to that for humans. Here's a woman that died in a water drinking contest from water intoxification:
