Hmm, this year we had that extra cold winter that turned into a mild spring, so I think we mostly held out until around Mar, and even then it hardly ever ran. I run the fan, but the AC hardly ever kicked on.
Usually in Houston, it's possible to have the AC on in any particular month. It's not unusual for the temps in Dec or Jan to occasionally be in the 80s which feels very warm when the rest of the weather is in the 60s.
I rarely have the house open. I wish I could do it more, but the humidity is usually the problem.
