I live in the area and have rented a few cabins in the Pigeon Forge/Gatlinburg area (in fact, we've thinking about renting one in September). One of your requirements that will be harder to meet is the pool. Not much flat land for a pool.
The absolute best cabin rental we've had around here was in Wears Valley (just west of Pigeon Forge about 15 minutes). Traffic in Pigeon Forge and Gatlinburg can be rough, so it's nice to stay just outside of there.
