One thing you can do, is simply remove the black foam rubber covers...underneath are perfectly good hard plastic knobs.

From what I recall, the earliest 911's didn't even have the rubber covers.

It may also be possible to fill in the cracks on your existing knob covers and then paint/dye them back to dark black. I never tried this myself though.
