Driving into work today, I had a craving for Migas...low and behold, the café was offering a special on them!!! Yee Haw. For those who do not know:

Tex-Mex cuisine, migas is a traditional breakfast dish consisting of scrambled eggs mixed with strips of corn tortilla. Migas are a very popular dish at restaurants all over Texas.
Traditionally eaten during Lent, the meatless version consists of scrambled egg sautéed in butter or oil with torn strips of corn tortillas, diced onions, sliced chile peppers, diced fresh tomatoes, and cheese, plus various spices and condiments (e.g. salsa, pico de gallo). A version is also served which adds a spicy chorizo to the standard ingredients.
